Healthy St. Patty’s Day Snacks

HAPPY ST. PATTY’S DAY!

Surprisingly, I’m Irish!! I don’t think I could get away with wearing a “Kiss Me I’m Irish” shirt, one because I’m married and two because I’m probably less than 5% Irish (on my mom’s side)!

BUT that 5% still gives me the opportunity to share some of my most favorite healthy St. Patty’s Day snacks. Bring these over to your friends’ house or WOW your guests at your Lucky Leprechaun Party! Who doesn’t love Sour Patch Kids? Well, how about Sour Patch Grapes or “Leprechaun Candy“! This cute idea from Boysahoy is not only delicious but super cute & healthy!

What You’ll Need:

  • Green Grapes
  • 1 Package of Green Jello

What You’ll Do:

  • Wash your grapes
  • Remove any stems
  • Combine Jello powder and a handle full of grapes at a time in a plastic bag and shake!
  • Refrigerate for 3 or more hours

I don’t know anyone who doesn’t love a good skewer! Now let’s make them green and healthy!! These Fruit Skewers from Creative Juice are not only adorable, but will be a topic of discussion at this year’s St. Patty’s Day Party!

What You’ll Need:

  • Green fruits – apple, pear, honeydew melon, kiwi, grapes
  • Wooden skewers
  • Green ribbon or decorative tape

What You’ll Do:

  • Slice the apples, pears, & kiwi to your desired size and shape [Important: when cutting the melon be sure to cut them into a large rectangular shape – they will be the base of the skewer and hold it upright.]
  • Slide the fruit onto the skewer and fill about 1/2 way up  (you don’t want it to be too top heavy)
  • Use the melon as the base of the skewer so that it will stand upright
  • Place the skewers on a flat plate
  • Use ribbon or decorative tape to adorn the top!

And last but certainly not least, we can’t forget about the very symbolic Leprechaun Hats! How about cucumber and pepper Leprechaun Hats from Creative Foods?! These little guys are so simple, but so fun. I’d also say it would be okay to make some “green” yogurt dip to top these off as well!

Leprechaun Hat Snack

What You’ll Need:

  • Cucumbers
  • Yellow Bell pepper
  • White Cheese (I used Provolone)
  • Honey (or agave syrup)
  • Small square cutter (or just cut into small squares with a pairing knife)

What You’ll Do:

  • Take your cucumber and cut one inch cylinders (approximately). One cylinder will make two hats.
  • Stand your cucumber cylinders straight up and cut down the middle. Lay them flat, cut side down. Those will be the tops of your Leprechaun hats.
  • With the rest of your cucumber cut some cucumber sticks, slightly larger than your cylinders. Those will be the lip of your hats. (cut a cucumber cylinder larger than your top hat cylinders. Cut those in half, and then cut to make cucumber sticks).
  • With your small square cutter cut a few few squares out of yellow bell pepper.
  • With a knife cut some strips of cheese. I just eyeballed it–there really is no need to be precise. If it is too long you can always cut it shorter 🙂
  • Assemble the hats: You need half a cucumber cylinder, one cucumber stick, one yellow bell pepper square and one piece of cheese. You can use a little bit of honey or agave nectar to “glue” down the cheese and bell pepper, if desired. I used a toothpick and dabbed some honey where the cheese was going to be place.
